A Beer-Centric Dinner

For this session of Chow Hall I thought I would breakdown a coursed out meal. Some of these pairings might be a little off the wall and some might be tame. The idea is to experiment, push the envelope, diversify your pairings, and to never settle. Some of these pairings are of my own design, others are from working with my chef Jorel Pierce at Euclid Hall, and others are from the ingenious mind of Ryan Conklin, Euclid Hall’s Certified Cicerone. No matter who thought up the pairing the important…See More

Sometimes the Simples Pairings are the Best

For this session of Chow Hall I thought we’d talk about a very easy way to pair great food and great beer. This is probably one of the simplest and best forms of pairing and yet it’s also the one pairing that’s most commonly overlooked. No matter the situation you can find a way to make this pairing work time and time again. Have you guessed what kind of pairing method I’m talking about? Are you dying to know? I’m talking about pairing food and beer from the same regions of the world.Let’s…See More

The Wonderful World of Belgian Beer

For this session of Chow Hall I thought I would break down the popular styles of Belgian Beer and show some amazing pairings that will really bring them to life. We'll be focusing on Belgian Singles, Dubbels, Triples, and Quadruples. While there are many other styles to Belgian ales these are by far the most popular and easiest to remember; just think of the sequential order.Starting from the bottom and working our way up we have Belgian Singles. Typically this beer is rarely brewed and hardly…See More

Avery Brewing Co. Announces Expansion

http://www.notyourdadsbeer.comAvery Brewing Co. has just announced their plans for expansion. They are still in the works of sealing the deal on a 5.6 acre spot in north Boulder, 4910 and 4920 Nautilus Court. It will be a a great way to showcase our beers and set us apart from other breweries," Adam Avery told Westword in August. Stranahan's Colorado Whiskey Denise Use Of Their Name On Craft Beer

http://www.notyourdadsbeer.comI recently read on Shikes blog (WestWord) that Stranahan’s Colorado Whiskey is denying the use of their name on craft beer labels. Yes you heard me right. The number one whiskey of Colorado is denying the use of their name on Colorado craft beer labels.…See More

"I did. Wikl have my level 2 come GABF. Excellent program and it's needed with the amount of beers that exist on the market. Going for my Sommelier certifications after cicerone."

Profile Information

Tell us a little about yourself.
I am a certified beer server at Euclid Hall in Denver, Co. I love craft beer! I came from the world of wine and was thrust into the world of beer just under a year ago. I started with zero knowledge and overall dislike of beer. After a day of tasting around fifty craft beers my eyes were open to a world I had no idea existed. I spark was ignited and now I wish to share that same passion that I have and ignite a fire in you for all things craft beer!

Nice. I took my BJCP about 2 years ago and thought about doing the Cicerone program as well. We are actually organizing the off flavors seminar here locally that Ray is doing at the beginning of next month with a bunch of local distributor reps and members of our local home brew club.

I've also thought about making our new employees go through the basic level as well, especially those that don't have a strong beer background.

Nice, did you go through Ray Daniels program? If so, what did you think of it?

Marc, you either have some serious connections or a lot of money to be drinking all that fine beer that you have showcased in your photos. Either way, I think I need to move out to Colorado and be your close beer drinking buddy! Impressive photo journal of beers.
